I made my first challenge from The Daring Kitchen today. I discovered the website last night and I'm beyond ecstatic. I chose stroopwafels as my first attempt because they're my favorite cookies.
I didn't have a stroopwafel iron so I had to use a regular waffle maker. This proved to be rather detrimental because the divots were too deep, not allowing the batter to spread and get the signature thin waffers.
I made the filling ahead of time, thinking to reheat it when time comes to fill the cookies. That was a mistake because the mixture has crystalized and was no longer smooth.
I ended up making two batches of filling. For the first I substituted molasses for dark corn syrup (which I didn't have), but it came out with too strong of a flavor, so I made the second batch with light conr syrup and no molasses.
Overall, I think it was a good recipe but the main hurdle was the lack of a proper stroopwafel iron.
