Today has been spent entirely in the kitchen. I started with making Twice Baked Potatoes with Red Chickpeas and Cauliflower, which proved to be a daunting process as I had to cut the Cauliflower extra fine. It was alright, but next time I won't bother with the potatoes - the chickpeas cauliflower soup was even better without them.
Then, I made Oatmeal Fudge Bars that look pretty good, but I haven't had the chance to try them so I can't account to their taste. I sure hope they taste like the Starbucks ones :)
A few days ago I made Creamy French Lentil Soup with Mushrooms and Kale. I liked it a lot actually, but I will puree more lentils next time, because otherwise I have this weird feeling of soup = vegetables floating in water, and I don't like that one bit!
