One-pot pasta primavera for tonight's dinner, not that I have any idea what "primavera" actually means. That recipe is ok, but requires some workarounds. You can't really put any less water (or else the pasta won't cook), but the end result is more of a pasta soup, than pasta sauce. So I scooped some pasta with only a bit of the liquid to a separate bowl, in which I added mascarpone, goat cheese, and grated parmesan to thicken it up. I also modified the spices quite a bit - added turmeric, cumin, paprika, chili flakes, and mustard seeds. It was pretty good, warm and comforting.
Whenever Ben chops some onion for me, I take the leftovers and roll them into a ziplock snack bag that I freeze. This way, next time I need chopped onion - I just take the small package out, and add it to my dish. It's such a cute way of maximizing food usage!

I went outside to paint today, it was quite lovely. I forgot how nice it feels to create.
