Crème Anglaise

​The first time I've heard of this sweet sauce, I thought it's called Anglaise for Angels, because its taste was so sweet and light. It's only much later that I found out Crème Anglaise means English Creme, and it became much less of a romantic dish, but delicious  nevertheless.

​Some people add vanilla, but I prefer not to, in order to bring out the beautiful flavor of this Crème.


​Ingredients
  • 4 yolks
  • 0.333.... cup sugar
  • 1.5 cup milk

Instructions
  1. In a stand mixer with a whisk attachment, gradually beat the sugar into egg yolks until the mixture is pale yellow and the ribbon forms.
  2. Leave the mixer running on a low speed, and pour the milk in a thin stream into the bowl.
