Like so many good recipes, this one was discovered by mistake. I was making Molly Yeh's Pony Cake when I realized I don't have mascarpone for the frosting. Since it's winter and I'm lazy, the option of going outside to obtain some was immediately dismissed. I did have cream cheese though, so I decided to improvise, going off a basic buttercream frosting recipe.
While delicious on the cake, I found it was much easier to eat directly from the leftovers bowl, and in the morning I decided to put some on a cinnamon raisin toast. And so this magical spread was born.
