I ordered some almond paste online, but due to a severe snow storm (5"), was stuck inside and had to make my own. What a great misfortune!
1.5 cup blenched almond
1 cup icing sugar
1 egg white
1 tsp almond extract
In a food processor, process the almonds until finely ground, about 1 minute.
Add the rest of the ingredients. Process the mixture together until well-combined.
Emply the contents onto plastic wrap and form into a log shape.
Refrigerate for about an hour or until firm. At this point, the almond paste is ready to use.
